Spring is on its way and with the first buds sprouting I am starting to feel more energised and invigorated by the day. K proposed a walk earlier and so we ventured to High Poynton where we ambled down the Macclesfield Canal, scoping out the many barges and wondering what kind of life it would be to either live on a barge or hang out on them at the weekend....maybe a life for us when we are old and greyer!
Not far from Bollington we headed back via the Middlewood Way, an old disused railway line which pretty much follows the line of the canal. There I saw some gynormous frogs and loads of frog spawn. Horses were cantering by and bikes racing along. The latter part of last week was quite stressful for me workwise in preparing trial bundles and the like and it was fantastic to get out into the great outdoors.......so relaxing. I loved it. I think I need to invest in a decent Ordnance Survey map and go walking more often.
Earlier in the week we bought our very first organic vegetable box from a local organic grocers, Limited Resources. We got the small basic box as we are starting small to see how we go. In the box were onions, potatoes, a red pepper, green pepper, 2 beetroots, carrots and something else I can't remember in. Having scratched our heads for a while as to what on earth we could do with beetroot, neither of us ever having used fresh beetroot before, K has made a beetroot and cumin soup as a starter for our Sunday Roast later and we can have the rest for lunch tomorrow.
